Healthy Version of Peanut Butter Balls

A friend of mine sent me the link to this recipe. I am glad I  tried it! The kids loved them! Thanks Leah, for the link!

1 - cup honey 
1 1/2 - cups creamy peanut butter 
2 - cups dry powdered milk 
3 - cups quick or old fashioned oatmeal, uncooked 
1 - 2 - tablespoons wheat germ 
(I used a wheat germ flax seed mix) 
1/2 cup mini chocolate chips (optional) or 
graham cracker crumbs (optional) 

Mix all together with hand mixer. Form into balls with hands and freeze on a baking sheet lined with waxed paper until firm. Remove from freezer and store in a large zip lock bag in the refrigerator. 



Optional: If using chocolate chips add them with all the ingredients and roll into balls. If using graham cracker crumbs. After rolling into balls , roll into graham cracker crumbs and then freeze. I have always used either or but not both, my little guy loves the chocolate chips and my dd doesn't. 
You can also leave out the wheat germ if you do not have any one hand. It wont alter the texture or taste. It was just a perk I added to sneak in some goodness.

Cinnamon Crisp


Flour tortillas
vegetable cooking spray
1 tbsp. sugar
1/4 tsp. ground cinnamon


Preheat oven to 350 degrees.

Stir together the sugar and cinnamon in a small bowl. Firmly press mini-cookie cutters into the tortillas and place the tortilla cut-outs onto a foil lined baking sheet. Lightly spray with the cooking spray, then sprinkle cinnamon sugar over the tortilla cut-outs. Bake for 6-8 min or until lightly browned. Cool and serve with the fruit salsa.

Apple Crack Cobbler

Preheat oven to 325 degrees.

Spray 9x13 dish with pam.

Spread two cans of apple pie filling on the bottom of your pan.

Mix together: one box of yellow cake mix, two sticks of butter that is softened, one cup of dark brown sugar and one teaspoon of cinnamon.

Spread the mixture evenly over the pie filling and top with 1 or 2 cups of chopped pecans.

Bake for 45 minutes or until brown on top.

Snowman Cheeseball

I saw this cute snowman cheeseball recipe on Julie's blog and knew it was something we will have to try this Christmas season.

Here are her directions:

Just mix together (2) 8-oz. packages of cream cheese, a clove of garlic (minced) and a 1/4 cup of finely shredded mozzarella. Form the mixture into 2 balls, one larger and one smaller, then roll the balls in more mozzarella.

To assemble the snowman, stack the small ball on top of the larger (use toothpicks to stack if needed), then add peppercorns for the eyes and buttons; and a shred of carrot for the nose. To make the hat, cut circles from a piece of toasted wheat bread, then place it on his head with a toothpick!

RE: Pecan Pie

I saw this recipe here on the RE blog. It was a must try and it did not disappoint!

Filling is for a 9″ pie. You can double the recipe for a 9×13 pan, which is a size I love for a larger crowd. Heat oven to 350 degrees.

Beat together all ingredients except pecans.
3 eggs.
2/3 cup sugar
1/2 tsp. salt
1/3 cup butter, melted
1 cup dark corn syrup
1 cup pecan halves

Add in the pecans and mix by hand. Pour into pastry-lined pie pan. Bake until set at 375 degrees for 40 to 50 minutes, or until set.

Easy and Yummy Pumpkin Muffins

1 (15 oz) can of Pumpkin
1 box of Spice Cake Mix

Mix thoroughly. (Yes, you read that right...nothing else just those 2 ingredients!)

Place in Muffin pan.

Bake at 350 degrees for 15-20 minutes.

Pumpkin Cookies with Glaze


2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
Icing:
2 cups confectioners' sugar3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract

Preheat oven to 350 degrees.

Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.

In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients.

Drop on cookie sheet by tablespoonfuls; flatten slightly.

Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.


To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.

Dipped Oreos

Christmas Season brings cookie exchanges and cookie baskets. Dipped Oreos are a favorite cookie to add. They are so simple and so good!

Melt white chocolate in microwave until mixture is smooth. Dip Oreos to coat evenly; shake off excess.

Place Oreos on foil lined baking sheet and let set for 10 - 15 minutes.

You can really have fun with it by melting red or green candy melts and piping stripes or polka dots on each one.
